India’s New Provisions on Yeast in Bread and Biscuits

Food Safety and Standards Authority of India (FSSAI) announced the revision of the Food Safety and Standards (Food Product Standards and Food Additives) Regulations on yeast in bread and biscuits

On June 30th, 2017, Food Safety and Standards Authority of India (FSSAI) in compliance with the notification F. No.11/09/Reg/Harmoniztn/2014 (2016-09-05) announced the revision of the Food Safety and Standards (Food Product Standards and Food Additives) Regulation, regarding the use of yeast in bread and biscuits.

Before this, in article 3.23 of Food Safety and Standards (Food Product Standards and Food Additives) Regulation, yeast was considered as a food additive used in baking. Stemming from the consideration of stakeholders’ needs and in accordance with Good Manufacturing Practices, the amendment of the regulation on yeast in bread and biscuits declares yeast to be considered a food ingredient and no longer an additive.
