Canada Seeks Comments on New Food Microbiological Standards

Health Canada proposed updated microbiological criteria that would make Salmonella limits mandatory across multiple food categories and add a mandatory Cronobacter criterion for powdered infant formula. The proposal would also replace part of the current framework with a new voluntary microbiological guideline document that sets indicator-organism thresholds for process control.

On June 11, 2026, Health Canada released a proposal to update the microbiological criteria for various foods. The proposal aims to modernize food safety standards by modifying the Table of Microbiological Criteria for Food and the Table of Microbiological Reference Methods for Food, and by publishing a new draft guidance document titled Microbiological Guidelines for Food. Stakeholders are invited to submit comments on the proposal until August 25, 2026.
